Okay, so maybe I’m late to the party. Maybe everyone out there in Internetland is already fully aware of this incredibly yummy way to make salad dressing. If so, let me know.
Or, don’t, and make me feel wonderfully clever. It’s up to you.
So here’s the deal.
Pour some olive brine into a bowl. (I used Kalamata olive brine, because it’s divine, and it’s what I have on hand.)
Add some pesto sauce. I used sun-dried tomato pesto from a bottle. You could use ordinary bottled pesto, or you could use homemade pesto. I’m pretty sure it doesn’t matter.
Mix the two together with a fork.
When it gets to a consistency you like, you’re done. If it seems too thin, add more pesto; if it seems too thick, add more brine. I didn’t measure anything, I just eyeballed it. I know what kind of consistency I like in salad dressing, and I’m sure you do, too.
And ta-da! Salad dressing! And it is so, so, so good. I’ve been using it on salads the past week, and I can’t get enough of it. Personally I think it’s better than any store-bought dressing I’ve ever used.
